Ingredients

 
1/2 cup plus 1 tablespoon (125 g) soft margarine
 
1 cup (225 g) sugar
 
Pinch of salt
 
3 eggs
 
1 tablespoon rum
 
3 cups (450 g) all-purpose flour
 
2 teaspoons baking powder
 
Oil to deep-fry
 
2 tablespoons (25 g) vanilla sugar

Directions

In a medium bowl, beat margarine, half the unflavored sugar, salt and eggs until smooth.
Stir in rum.
Sift flour and baking powder together over mixture; fold in thoroughly to make a dough.
Knead well.
Press dough into a ball and wrap in foil or plastic wrap.
Refrigerate 30 minutes.
Heat oil in a deep-frying pan to 360°F (180°C).
On a floured surface, roll out dough 1/4 inch (5 mm) thick.
Cut dough into 8x3/4-inch (20x1.5-cm) strips.
Knot each strip tightly.
Fry knots four at a time 5 minutes or until golden.
Turn once with a slotted spoon during cooking.
Lift out cooked knots with slotted spoon; drain on paper towels.
Mix remaining unflavored sugar and vanilla sugar; sprinkle over warm knots.
