Sugared Almond Biscotti Recipe Video
Ingredients
All Purpose Flour - 1 3/4 cups
Baking Powder - 1/2 teaspoon
Salt - 1/2 teaspoon
Eggs - 2, plus one separated egg (Egg white will be used for brushing top of dough.)
Granulated Sugar - 1 cup
Vanilla Extract - 1 teaspoon
Amaretto OR Other Almond Flavored Liqueur - 1 tablespoon (You may substitute almond extract)
Whole Almonds - 2 cups coarsely chopped
Cooking Oil Spray - as required
Sugar - for sprinkling tops
Directions
GETTING READY
1. Preheat the oven to 325 degrees F.
2. Prepare a 15-inch by 9-inch baking pan by lining it with parchment paper and spraying it with cooking oil spray.
MAKING
3. In a medium-sized mixing bowl, combine flour, baking powder, and salt and set aside.
4. In a large mixing bowl, beat eggs, plus 1 egg yolk and sugar with an electric mixer, until light and fluffy (about 2 minutes).
5. Beat in vanilla extract and Amaretto.
6. Stir in dry ingredients and chopped almonds to form dough.
7. Spoon dough into 2 logs on baking pan.
8. Brush each log with egg white and sprinkle with a small amount of sugar.
9. Bake in the preheated oven for 20 minutes, or until logs are golden and beginning to crack.
10. Cool on baking sheet for 40 minutes.
11. Using a serrated knife, slice logs diagonally into 1/2 inch slices.
12. Place slices flat on baking sheet(s) in a single layer.
13. Bake at 200 degrees (F) for 25 minutes.
14. Remove from oven and cool.

15. You may store these in an airtight container for up to 2 weeks.
