Ingredients

 
2/3 cup water
 
1/3 cup cider vinegar
 
1 tablespoon sugar
 
1/4 teaspoon salt
 
1/4 teaspoon black pepper
 
1 large cucumber, peeled, seeded, and sliced
 
1 onion, sliced
 
1 teaspoon dried dill leaves
 
4 cups sugar snap peas, stems and strings removed

Directions

1. Combine water, vinegar, sugar, salt, and black pepper in a glass bowl.
2. Add cucumber, onion, and dill and toss.
3. Cover and refrigerate for at least 1 hour.
4. Fill a large saucepan with water and bring to a boil. Drop sugar snap peas in for 1 minute. Drain, rinse in ice water, and drain again.
5. Refrigerate until ready to use.
6. When ready to use, toss sugar snap peas with cucumber-onion mixture.
