Ingredients
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon ground ginger
1/2 teaspoon ground nutmeg
1/4 teaspoon baking soda
1/4 teaspoon salt
2/3 cup packed brown sugar
1/3 cup shortening
2 eggs
1 8 ounce can sweet potatoes, drained and mashed
1/4 cup orange juice
Directions
Lightly grease a 9x5x3 inch loaf pan; set aside.
In a mixing bowl stir together the flour, baking powder, ginger, nutmeg, baking soda, and salt; set aside.
In a large mixer bowl beat together the sugar and shortening till combined; beat in eggs.
Add the mashed sweet potatoes and orange juice to beaten mixture (mixture may appear curdled); mix well.
Gradually add the flour mixture, beating till combined.
Turn the batter into prepared loaf pan.
Bake in a 350° oven for 40 minutes or till a wooden toothpick comes out clean.
Cool 10 minutes in pan.
Remove from pan; cool on wire rack.
Wrap and store overnight before slicing.
