| Orange juice | 3 Tablespoon | |
| Extra virgin olive oil | 2 Teaspoon | |
| 1/2 cup orange segments | ||
| Mint leaves | 8 | |
| Slivered almonds | 2 Teaspoon, toasted | |
| Black pepper salt | 1 To taste | |
Directions
In a medium saucepan, blanch the peas in rapidly boiling water for 2 minutes, or until bright green and crisp-tender.
Plunge immediately into ice water.
Drain.
Turn into a large bowl.
In a small cup, whisk together the orange juice and oil.
Pour over the peas and toss to coat.
Gently toss in the orange segments, mint and almonds.
Add salt and pepper to taste.
