Sugar Free orange Marmalade Recipe
Ingredients
| Oranges | 500 Gram | |
| Water | 3 Cup (48 tbs) | |
| Gelatin | 1 Tablespoon | |
| Hot water | 1⁄4 Cup (4 tbs) | |
| Sugar free sweetener tablets | 16 , crushed |
Directions
Wash oranges, cut into quarters and peel.
Remove white pith from orange skin and shred peel.
Remove seeds and pith from oranges.
Reserve seeds.
Shred flesh.
Place peel and orange flesh in a bowl and pour in water.
Tie seeds in a small muslin cloth and add to bowl.
Set aside for 2 days.
Pour contents of bowl into a pan and place pan over high heat.
Bring to boil, lower heat and simmer for about 15 minutes till soft.
Remove muslin bag and discard.
Sprinkle gelatine into hot water and set aside till melted.
Stir in sweetener and pour into oranges.
Taste and add more sweetener, if required.
Mix well, cool and pour into sterilized jars.
Keep refrigerated.

I can't figure out where the two days comes in? Does it soften, or what? Does it mean I'll have to wait 2 days to do the jam recipe?

Yes macerating the orange zest in the orange pulp and juice helps to extract maximum flavor and softens the peel. If you want to speed up the process, maybe you can leave it overnight or 12 hours.
