Sugar Bunnies Recipe
Ingredients
| Margarine | 1/3 Cup (16 tbs), softened | |
| Neufchatel cheese | 1 1/2 Ounce, softened | |
| Sugar | 1/4 Cup (16 tbs) | |
| Egg substitute | 1/4 Cup (16 tbs), frozen | |
| 1/2 teaspoon grated lemon rind | ||
| Lemon juice | 2 Teaspoon | |
| Vanilla extract | 1/4 Teaspoon | |
| All purpose flour | 2 1/4 Cup (16 tbs) | |
| Baking powder | 2 Teaspoon | |
| Salt | 1/8 Teaspoon | |
| 1 teaspoon all-purpose flour, divided | ||
| Vegetable cooking spray | ||
| Semi-sweet chocolate morsels | 30 | |
| Powdered sugar | 1 Tablespoon, sifted | |
Directions
Beat margarine and cheese at medium speed of an electric mixer until creamy; gradually add 1/3 cup sugar, beating well.
Add egg substitute and next 3 ingredients; beat well.
Combine 2 1/4 cups flour, baking powder, and salt.
Gradually add to margarine mixture, mixing well.
Shape into a ball; cover and chill at least 1 hour.
Sprinkle 1/2 teaspoon flour evenly over work surface.
Divide dough into 2 portions.
Roll 1 portion of dough to 1/8 inch thickness on floured surface; cut with a 3-inch bunny-shaped cookie cutter.
Place on a cookie sheet coated with cooking spray.
Repeat procedure with remaining 1/2 teaspoon flour and dough.
Place 1 chocolate morsel on each to make eyes.
Bake at 375° for 13 minutes or until lightly browned.
Remove from cookie sheets, and place on wire racks; sprinkle cookies evenly with powdered sugar.
