Succotash Recipe
This succotash recipe is cooked with lima beans and whole corn along with cream. Simply seasoned and flavored with added butter, the succotash is great for homely meals and dinners.
Ingredients
2 cups fresh Lima beans or 2 packages frozen Lima beans
1 teaspoon salt
Dash of pepper
1 teaspoon sugar
2 cups whole kernel corn
1/2 cup water
1/4 cup heavy cream
2 tablespoons butter
Directions
Cook Lima beans in boiling, salted water until tender (if frozen Lima beans are used, cook according to package directions).
Mix cooked beans with corn (if fresh, cut from the cob; if canned, drain; if frozen, use straight from the package), butter, salt, pepper, sugar, and water.
Cook over a low heat for 10 to 15 minutes.
Drain, then add cream.
Heat through but do not boil.
