Succotash Recipe
Ingredients
| Lima beans | 2 Cup (16 tbs) | |
| 2 cups corn cut from cob | ||
| 3 tablespoons reduced-calorie margarine | ||
| Onion | 1/4 Cup (16 tbs), finley chopped | |
| Parsley | 2 Tablespoon, chopped | |
| Salt | 1/4 Teaspoon | |
| Pepper | 1/8 Teaspoon | |
Directions
Place lima beans in a large saucepan, and add water to cover; bring to a boil.
Cover, reduce heat, and simmer 10 minutes.
Add corn; cover and cook 7 minutes or until beans are tender.
Drain well.
Melt margarine in saucepan over medium-high heat.
Add onion, and saute 2 minutes.
Remove from heat.
Stir in lima bean mixture, parsley, salt, and pepper
