Su No Mo No Salad Recipe

Ingredients
4 Tbsp. sugar 60 mL
7 Tbsp. vinegar
2 Tbsp. soy sauce 30 mL
1/4 tsp. salt mustard or grated ginger 1 mL
1/2 pkg. harusame 1/2 pkg.
1/2 English cucumber 1/2
1/4 medium carrot 1/4
1 egg, hard cooked and sliced
1 slice ham 1 slice
Directions
In a saucepan put sugar, vinegars, soy sauce and salt; and bring to boil.
Do not stir until it boils.
Add mustard or grated ginger (optional).
Remove from heat and cool.
Boil harusame in another saucepan for 3 to 4 minutes (until there are no white streaks when you pick it up with chopsticks).
Cool the harusame in cold water.
Slice the cucumber thinly; sprinkle with salt and wash under cold water.
Shred the carrot.
Mix the harusame, carrot and cucumber into the cooled dressing.
Use the egg and ham for topping.
