Stuffing For Goose Recipe
Ingredients
| Butter | 1/3 Cup (16 tbs) | |
| Onions | 3/4 Cup (16 tbs), finley chopped | |
| 3 cups cored and chopped apples | ||
| Seedless raisins | 1/2 Cup (16 tbs) | |
| Parsley | 2 Tablespoon, finely chopped | |
| Salt | 1 Teaspoon | |
| Ground pepper | 1/4 Teaspoon | |
| Ground cinnamon | 1/8 Teaspoon | |
| Dried sage | 1/2 Teaspoon, crushed | |
| 1/4 tsp crushed drjed thyme | ||
| Dried basil | 1/4 Teaspoon, crushed | |
| 5 cups soft stale bread crumbs | ||
| Brown sugar | 3 Tablespoon | |
Directions
Melt the butter in a large frying pan.
Saute the onions over low heat about 5 minutes or until barely transparent.
Add the apples, raisins, and seasonings.
Continue cooking over moderate heat 5 minutes.
Pour this savoury mixture over the bread crumbs and brown sugar.
Toss well.
Divide the stuffing roughly, 1/3 for the neck cavity and for the body.
Pack in lightly and skewer shut.
This is plenty of stuffing for a 7 to 8-lb goose.
For a larger goose, increase the bread to 7 cups, the butter to 1/2 cup, the onions to 1 cup, and the salt to 1 1/2 tsp.
