Ingredients

 
10 very small zucchini (about 1 pound)
 
Salt and pepper
 
1/4 pound walnuts, chopped
 
1/4 pound mushrooms, chopped
 
1 small green bell pepper, chopped
 
1 small onion, chopped
 
3 tablespoons chopped parsley
 
1 teaspoon oregano,
 
2 tablespoons butter or margarine
 
Red pepper
 
1 1/2 cups water

Directions

Wash, stem and core the zucchini.
Use the pulp for another purpose.
If the zucchini are large, cut them in half lengthwise.
Sprinkle the insides with salt and pepper.
Set aside.
Prepare the filling by mixing together the walnuts, mushrooms, green pepper, onion, parsley, oregano, butter, salt and pepper and the red pepper.
Fill the zucchini with the mixture.
Arrange the stuffed zucchini in a lightly greased baking pan and bake at 350 degrees.
Cover with the water and a little salt.
Cover and bring to boil over high heat.
Reduce heat and simmer, covered, for about twenty-five minutes.
Drain and serve hot.
This dish is a good accompaniment to meat.
