Stuffed Veal Shoulder Recipe

| Stuffing- as required | ||
| Melted fat or salt pork- as required | ||
| Salt | To Taste | |

Directions
GETTING READY
1.In the market, tell the butcher to remove the bones from the veal shoulder
2.Also preheat the oven to 325F degrees
MAKING
3.Season the cavity of the veal shoulder and fill with stuffing
4.Sew or skewer edges together
5.On the rack of a roaster, place the meat
6.Brush with fat or cover with strips of salt pork
7.Bake uncovered in moderate oven for 40 minutes to the pound, or until meat thermometer registers 175° F
