Ingredients

 
2 small summer squash
 
1 small onion, minced
 
3 tablespoons butter
 
1 hard-cooked egg, chopped
 
1/2 grated Cheddar cheese
 
1 egg, beaten
 
1 cup buttered bread crumbs

Directions

Cut squashes in half lengthwise, scoop pulp from squash, leaving shells.
Dice pulp; saute onion and squash pulp in butter in skillet for 10 minutes.
Add hard-cooked egg, cheese, and beaten egg.
Mix well; fill squash shells with mixture.
Sprinkle with crumbs; bake at 375° for 20 to 25 minutes
