Ingredients
8 slices bacon, reserve 1 Tbs bacon fat
18 white mushrooms (about 2" in diameter)
18 cremini mushrooms (about 2" in diameter)
1 cup finely chopped onion
1/4 cup olive oil
4 oz feta cheese crumbles
3 oz cream cheese at room temperature
7 oz baby spinach, cooked and drained and chopped
1/2 tsp crushed red pepper
salt and pepper
Directions
Saute onion in bacon fat until golden. Drain and combine with spinach, cream cheese,
feta, crumbled bacon, red pepper and salt and pepper to taste.
Toss mushrooms in 1/4 cup olive oil and season with salt and pepper.
Place rounded sides down in a single layer on a foil lined baking sheet and
cook at 375 for 20 mins, or until caps fill with liquid. Turn over and cook on other
side for about 20 mins or until most liquid has evaporated.
Turn mushrooms over and stuff, with about 1 tsp of stuffing per cap. Mushrooms can be refrigerated covered, for up to
one day. Heat for 10 mins (uncovered) in a 375 F oven when ready to serve.
