Stuffed Pork Chops With Maple-Orange Sauce Recipe

Ingredients
6 rib pork chops, 1 inch thick
1 cup chopped celery
1/2 cup chopped onion
1/4 cup butter or margarine
1 cup sliced mushrooms
1 tsp. salt
1/2 tsp. poultry seasoning
1/4 tsp. pepper
1 cup maple blended syrup
1/2 cup orange juice
Directions
Ask your butcher to cut a pocket in each of 6 rib pork chops, 1 inch thick, and trim away all but about 1/8 inch fat.
Saute 1 cup chopped celery and 1/2 cup chopped onion 5 minutes in 2 tablespoons of the 1/4 cup butter or margarine.
Add 1 cup sliced mushrooms and saute 5 minutes more.
Remove from heat and stir in 1 teaspoon salt, 1/2 teaspoon poultry seasoning and 1/4 teaspoon pepper.
Cool slightly, then spoon mixture into pockets in each pork chop.
In a heavy skillet saute chops over low heat in remaining 2 tablespoons butter or margarine 5 minutes per side.
Add 1 cup maple blended syrup and 1/2 cup orange juice to skillet, cover and simmer 20 minutes.
Remove cover and continue cooking 10 minutes more, basting frequently with pan juices.
