Stuffed Pepper Slices Recipe
These stuffed pepper slices is a non cooked stuffed pepper recipe. Made with a filling of cottage cheese combined with gelatin, the stuffed pepper slices are chilled and sliced for serving. Served as a side with hot and spicy dishes, these are quite savory.
Ingredients

| 8 ounces low-fat or regular cottage cheese | ||
| 2 tablespoons skim or whole milk | ||
| Pimiento | 1 Tablespoon, chopped | |
| Parsley | 1 Tablespoon, chopped | |
| Watercress | 1 Tablespoon, chopped | |
| Chives | 1 Tablespoon, chopped | |
| Salt | 1/4 Teaspoon | |
| Pepper white | 1/8 Teaspoon | |
| Lemon juice | 1 Teaspoon | |
| Unflavored gelatin | 1 | |
| Cold water | 1/3 Cup (16 tbs) | |

Directions
Cut off tops of peppers; remove seeds; wash.
Cream cottage cheese in blender (thin with milk if necessary); remove.
Add pimiento, parsley, watercress, chives, salt, pepper, and lemon juice.
Soak gelatin in cold water; dissolve completely over simmering water.
Add to cheese mixture.
Fill peppers with mixture; chill in refrigerator at least 2 hours.
Cut each pepper into 4 thick slices.
