Stuffed Peaches Recipe
Ingredients
| Unflavored gelatin | 2 1/2 Tablespoon | |
| Water | 1/2 Cup (16 tbs) | |
| 1 No. 2 1/2 can peach halves | ||
| Peach juice | 2 Cup (16 tbs) | |
| Sugar | 1 1/2 Cup (16 tbs) | |
| Lemon juice | 3/4 Cup (16 tbs) | |
| Lime juice | 3 Tablespoon | |
| Package cream cheese | 1 8 Ounce | |
| 1 tbsp mayonnaise finely chopped walnuts | ||
Directions
Soften gelatin in water.
Drain canned peaches and reserve juice.
Add sufficient water to juice to make 2 cups.
Pour peach juice and sugar into a saucepan and bring to a boil.
Add gelatin and stir until dissolved.
Remove from stove and add lemon juice and lime juice.
Measure liquid and add sufficient water to make 4 cups.
Chill until liquid begins to thicken.
Soften cream cheese with mayonnaise and shape into individual 1 inch balls.
Roll balls in chopped walnuts and place inside peach halves.
Allow 1 peach half per serving.
Place stuffed peach halves in individual molds and pour 1/2 cup of thickened gelatin mixture over each mold.
Chill until firm.
