Stuffed Peaches Recipe

Ingredients
6 large peaches, halved
2 tablespoons unsalted butter
1 teaspoon sugar
1 egg white
1 teaspoon fresh lemon juice
2 teaspoons brandy
4 ounces amaretti (cookies), crushed
Directions
Preheat the oven to 350 degrees.
Arrange the peaches cut side up in a buttered ovenproof dish.
Combine the butter, sugar and egg white in a mixing bowl and beat until well mixed.
Stir in the lemon juice and brandy.
Fold in the crushed amaretti.
Place a mound of the brandy mixture on each peach half.
Bake, uncovered, for 20 minutes.
Serve warm, with pan juices spooned over each serving along with a sprinkling of grated lemon zest.
