Stuffed Mushrooms (Funghi Ripiene) Recipe
Ingredients
1 lb (500 g) large fresh mushrooms
2/3 cup (85 g) bread crumbs
salt and pepper
1/2 cup (60 g) grated Parmesan cheese
1/4 teaspoon oregano
1/3 cup (83 ml) olive oil
Directions
Wipe the mushrooms with a damp cloth and remove stems.
Place mushrooms, top down, in a shallow baking dish.
Mix together bread crumbs, salt, pepper, cheese and oregano.
Fill mushroom tops with this mixture.
Sprinkle the oil over it all.
Bake in a 350°F (180°C) oven for about 15 minutes.
