• 1 packet of fresh gourmet stuffing mushrooms
• 3 tbsp butter/margarine
• ½ large diced onion
• juice from half of a lemon
• tofu
• ¾ cup Italian breadcrumbs
• ½ cup grated parmesan cheese
• ¼ cup half and half or soy creamer
• salt and pepper
• 1 tsp dry oregano
• 1 tsp dry thyme
• freshly chopped parsley

Looking for a nice vegetarian dish? This recipe of stuffed mushrooms with cheese is ready under 10 minutes and is a quick snack whenever you need it.
Directions for preparation:
• Preheat the oven to 500 degrees
• Heat some margarine/butter in a sauté pan and add some chopped onions. Let them sauté for 2 minutes.
• Take the mushrooms and put the stalk out. Chop the stalks and add them to the sauté pan with the onions.
• Crumble the tofu and add that too into the pan.
• Add some fresh garlic to the pan now and stir it all well.
• Squeeze in some lemon juice into the pan and sprinkle some salt and pepper.
• Add the dry oregano and thyme next.
• Add some breadcrumbs next and stir it in well.
• Turn the heat off and add the soy creamer and half and half next. Stir well and sprinkle it with some shredded parmesan cheese.
• Take a spoonful of the stuffing and put it in the hollowed out mushrooms. Fill them to the top.
• Put the mushrooms on a baking foil in a baking pan and pop them in the oven to bake for 5-7 minutes.
• Take them out of the oven and garnish them with the freshly chopped parsley
• Serve fresh and hot.
