Stuffed Melon Salad Recipe
Ingredients
1 ripe avocado, peeled, halved and deseeded
Juice 1 lemon
one 11/2 kg (3 lb) chicken, roasted
1 melon
1 green pepper, deseeded and cut in strips
1 small onion, chopped
50 g (2 oz) (1/3 cup) raisins
Salt and pepper
250 g (9 oz) (1 cup) cooked rice
Directions
1 Cut the avocado flesh into chunks, cover with lemon juice and put aside.
2 Cut the chicken meat into strips.
Cut around the top of the melon in a zig-zag motion and remove the lid.
With a Parisian cutter, hollow out the flesh to form balls.
3 Mix the avocado, chicken, melon balls, pepper, onion, raisins, seasoning and rice.
Fill the melon shell with this mixture and serve the rest separately or use it to stuff another melon.
Surround the melon (s) with a coleslaw salad and serve with mayonnaise.
