Stuffed Loin Pork Microwave Method Recipe
This recipe for stuffed loin pork can be prepared in the microwave. Easy and simple to prepare, the pork loin is spread with a mix of pears, breadcrumbs and lemon rinds. Rolled up and seasoned with salt, the stuffed pork can be served with a side of choice as a full meal. Adapted from Sharp Microwave and Convection Cookbook.
Ingredients
1.5 kg loin pork
2 pears, peeled, cored and finely chopped
1.2 cup breadcrumbs rind of 1 lemon
Directions

Combine pears, breadcrumbs and lemon rind.

Spread along centre of loin.
Roll up and tie tightly with string.
3.
Sprinkle rind with salt.
4.
Place on a roasting rack, rind-side down.
5.
Cook for 55-60 minutes on MEDIUM, turning over halfway through cooking.
