Ingredients

| Besan | 1 Teaspoon | |

| Amchoor powder | 1/2 Teaspoon | |
| Turmeric powder | 2 Teaspoon | |
| Coriander powder | 2 Teaspoon | |
| Garam masala | 1/2 Teaspoon | |
| Ghee | 3 Tablespoon | |
| Oil | 3 Tablespoon | |
| Salt | To Taste |
Directions
GETTING READY
1 Scrape the bitter gourd (karela) well.
2 Rub nicely with salt and allow to dry in the shade.
MAKING
3 Rinse well with cold water.
4 Gently squeeze out all the water.
5 Using a sharp knife, cut a slit on one side.
6 In a pan, heat the ghee.
7 Add in onions, tomatoes, green chillies, amchoor and fry till brown.
8 Add in the coriander, turmeric powders, garam masala and salt.
9 Simmer for a minute and remove from the heat.
10 Allow to cool.
11 In a bowl, prepare a thick paste by mixing gram flour with water.
12 Stuff the bitter gourds with the prepared masala and carefully seal the slit with the gram flour paste.
13 In a heavy saucepan, heat the oil .
14 Gradually add in the karelas and shallow fry till tender.
SERVING
15 Serve hot, with chapatis.
