Stuffed Herrings Recipe
Ingredients
| 4 herrings, with hard or soft roes, | ||
| Shallot | 1 | |
| 1 or 2 slices of bread with the crusts cut off, | ||
| 3 or 4 tablespoonfuls of chopped mixed herbs, | ||
| 8 tablespoonfuls of butter, | ||
| Milk, | ||
| White breadcrumbs. | ||
Directions
Clean the herrings.
Mash up the roes with a fork (they may be hard or soft ones), mix with the bread soaked in milk, 1 tablespoonful of mixed herbs and the shallot, very finely chopped.
Beat 2 tablespoonfuls of butter into this mixture, season; stuff the herrings with it.
Grease a fireproof dish amply using 2 tablespoonfuls of butter; sprinkle with the rest of the mixed herbs; place the stuffed herrings on this, sprinkle with breadcrumbs, and 4 tablespoonfuls of melted butter.
Bake in the oven for 20 to 25 minutes, basting frequently with the melted butter.
