Stuffed Green Peppers Recipe

Ingredients
8 large green peppers
12 ounce sharp Cheddar cheese, shredded
1 can tomatoes
1 large onion, chopped
1 clove garlic, minced
3 tablespoons margarine
1/4 teaspoon each dried basil and oregano
1 cup rice, cooked
1 can red kidney beans, drained
1 teaspoon salt
Dash hot pepper sauce
Directions
Preheat oven to 350°F.
Cut top slice off peppers; remove seeds; parboil in boiling water 3 minutes; drain and stand upside down on paper.
Drain tomatoes, reserving juice.
Saute onion in margarine until onion is soft.
Add chopped tomatoes and heat through.
Remove from heat.
Add remaining ingredients and mix well.
Stand peppers upright in deep baking dish; fill with mixture and add 1 tablespoon of tomato juice to each stuffed pepper.
Cover and bake 30 minutes.
If desired, uncover and brush with margarine the last 5 minutes of baking.
