Stuffed Flank Steak Recipe

Ingredients
1 large 1 pound flank steak
Salt and pepper
Stuffing
3/4 cup sausage meat
1 apple, peeled and sliced
1 1/2 cups dried bread crumbs
1 tablespoon finely minced onion
1/4 teaspoon salt
3 tablespoons shortening
3/4 cup water
Directions
Trim edges of flank steak and sprinkle with salt and pepper.
Set aside.
Brown the sausage in a fry pan and pour off excess fat.
Add the apple, bread crumbs, onion, and salt.
Mix together well.
Spread this mixture over the flank steak and roll steak up loosely, tying it securely.
Put shortening in pressure cooker and brown the tied steak on all sides.
Add water cover securely, and set pressure control in place.
After control jiggles, cook for 35 minutes.
Cool cooker naturally for 5 minutes, then reduce pressure under running water.
If gravy is desired, thicken the essence that is in the cooker and pour over flank steak.
Serve.
