Stuffed Fillet Of Silver Dory Gratin Recipe
Ingredients
| Mushrooms | 400 Gram | |
| Shallots | 4 | |
| Parsley sprigs | 4 Small | |
| Onion | 1 Medium | |
| Butter | 90 Gram | |
| Salt | To Taste | |

| 6 large silver dory fillets | ||
| Plain flour | 1/2 Cup (16 tbs) | |
| 2 eggs and 1/2 cup milk lightly mixed together | ||
| Bread crumbs | 1 Cup (16 tbs) | |
| Cooking oil | 3 Tablespoon | |
| Plain flour | 2 Tablespoon | |
| Dry white wine | 1 Cup (16 tbs) | |
| Cream fresh | 1 Cup (16 tbs) | |
| 1 cup grated Swiss type cheese | ||
Directions
In the work bowl finely chop the mushrooms, the shallots, the parsley and the onion.
Saute in the butter for 5 minutes.
Return to work bowl and chop until very fine.
Season and spread over the fillets.
Roll up the fillets and secure them with some toothpicks.
Roll them in the flour, dip in egg-milk mixture and coat in breadcrumbs.
Fry the fillets on medium flame in the butter-oil mixture for about 10 minutes until golden brown.
Keep hot.
Add 2 tablespoons of plain flour to the pan and cook for 2-3 minutes.
Add the wine and cook for 5 minutes.
Add the cream and season.
Preheat the grill.
Arrange the fish on a gratin dish, pour the sauce over it and sprinkle with the cheese.
Place under a grill and brown
