2 stalks celery
1 carrot
1/2 clove garlic
2 sprigs thyme or marjoram
45 g butter

1 cup dessert prunes, pitted
1/2 cup dry white wine
2 tablespoons honey
1/2 cup breadcrumbs
4 pieces of pork fillet, about 200 g each
8 sheets filo pastry
1/4 cup melted butter
Directions
Preheat oven to 190°C (375°F).
In work bowl finely chop the vegetables, the garlic and the herbs.
In a saucepan, using some of the butter saute the vegetables.
In the work bowl finely chop the prunes and add to the vegetables, continue to saute, add the wine, the honey and the breadcrumbs, cook for a further 5 minutes.
