Stuffed Eggs With Goose Liver Recipe
Ingredients
5 eggs
5 1/2 oz. goose liver
1 1/2 oz. lard
1 1/2 oz. butter
1 1/2 oz. onions
2 tbsp. bechamel sauce
2 tbsp. cognac
1/2 pt. mayonnaise sauce
Salt
Ground pepper
Directions
Cut the goose liver into slices, fry it with chopped onions and pound it together with the yolk of the hard boiled eggs.
Then mix smooth with butter and bechamel sauce.
Flavour with salt, pepper and cognac and then, with the aid of a forcing bag, fill the halved whites of the eggs with the mixture.
Arrange on a French salad base.
