Directions

Soak the mushrooms in hot water for 1/2 hour.
Drain and cut fine.
Wash the duck and dry thoroughly.
Mix 3 tablespoons soy sauce and 1 teaspoon salt and rub into the duck, inside and out.
Heat the oil in a skillet, saute the pork, celery, onions, garlic, and mushrooms for 5 minutes, stirring almost constantly.
Season with the remaining soy sauce and salt and add eggs and chili peppers, mix.
Stuff the duck, close the openings with skewers or thread.
Place on rack in a shallow roasting pan.
Roast in a 375° oven for 21/2 hours or until browned, crisp, and tender.
Cut into small pieces.
