Stuffed Clams Recipe
These Stuffed Clams made my day when I first tasted them with a bowl of fried rice at a friend's party ! Just try out these pork and scallion Stuffed Clams and tell me if you like them ! These are a delightful variation of stuffies- the western stuffed clam dish that you should surely not miss out upon !
Ingredients
2 1/2 pounds clams with shells
1/4 pound minced pork
1 slice ginger, chopped fine
1 stalk scallion, chopped fine
3 teaspoons sherry
1/2 teaspoon salt
1/2 teaspoon sugar
1 teaspoon soy sauce
1/4 cup chicken stock
2 tablespoons oil
Directions
Wash the clams well in cold water and then pour boiling water over them to open.
Remove the clams from the shells and try to preserve the liquid.
Mince the clams and mix with the meat and the clam juice.
Add the ginger, scallion, sherry, salt, sugar and soy sauce and mix well.
Fill the shells with this mixture and arrange on a baking dish containing the chicken stock and oil.
Preheat the oven to 450 degrees and bake for about 10 minutes, or until the pork is no longer pink.
Serve very hot in the baking dish.
