1 roaster chicken or capon, about 6 lbs.
Sweet Potato Stuffing
Directions
Rub cavities of chicken with a mixture of salt and pepper.
Lightly fill body and neck cavities with Sweet Potato Stuffing.
Truss.
Brush skin thoroughly with melted butter or margarine.
Place chicken, breast up, on rack in a shallow roasting pan.
Spread a piece of cheesecloth which has been dipped in melted butter or margarine over top and sides of chicken.
Roast uncovered at 325°F 3 to 3 1/2 hours, or until thickest part of drumstick is tender.
Keep cloth moist during roasting by brushing occasionally with fat from pan.
