1/2 cup warm water

Filling:

1/2 pound ground pork

2 tablespoons soy sauce

1/2 teaspoon sugar

1 teaspoon sherry

1 stalk scallion, chopped fine

1 tablespoon cornstarch

1/2 teaspoon sesame seed oil

Directions

Mix the ingredients for the filling well together, and set aside in the refrigerator to congeal.
Mix the warm water with the rice flour and knead for about 5 minutes.
Stretch into a long rope and cut into 24 pieces.
Make each piece of dough into a ball and then make an indentation big enough to put a teaspoon of filling in.
Pinch the dough over the filling and roll into a ball again.
Boil 6 cups of water in a saucepan and lower the balls into the water.
When water boils again, cook the balls for 5 minutes or until they start to float.
Add 1 cup of cold water to the saucepan to harden the balls.
Bring the water to a boil again and cook for another 2 or 3 minutes.
Serve in individual bowls with the liquid.
