Stuffed Baked Potatoes Recipe
Ingredients
4 medium baking potatoes
1/2 teaspoon paprika
1 cup nonfat cottage cheese
1/2 teaspoon black pepper
1/4 cup skim milk
1/4 cup grated nonfat cheese
2 tablespoons chopped scallions
Directions
1. Preheat oven to 400 degrees.
2. Pierce potatoes with a fork and bake for 1 hour. Cool for 10 minutes.
3. Cut potatoes in half. Scoop out pulp, leaving a 1/2-inch shell, and place in a medium bowl. Mash the pulp with a fork or potato masher.
4. Place cottage cheese and milk in a blender or food processor and process until smooth.
5. Add blended cottage cheese, scallions, paprika, black pepper, and cheese to potatoes and mix well.
6. Stuff potato shells with mixture.
7. Bake at 400 degrees for 10 minutes.
