Stuffed Baked Potatoes Recipe

Ingredients
6 medium equal-sized potatoes
3 tbsp (50 mL) butter
1/3 cup (80 mL) sour cream or plain yogourt
1/2 tsp (2 mL) salt
1/4 tsp (1 mL) pepper
1/2 tsp (2 mL) savory (optional)
2 green onions chopped fine
Paprika to taste
Directions
Scrub potatoes under cold running water.
Place them in a circle in the microwave oven.
Microwave 14 to 16 minutes at HIGH.
Check doneness with the point of a knife after 14 minutes.
Let cool 5 minutes.
Cut an oval slice on top of each potato and scoop out the pulp with a spoon, or cut each potato in half and empty shell.
Add to the potato pulp the remaining ingredients except the paprika.
Mash until smooth and creamy.
Fill each potato shell with the mashed potato.
Sprinkle with paprika.
Place in the microwave oven in a circle.
Microwave at MEDIUM-HIGH 4 to 7 minutes or until potatoes are piping hot.
Do not refrigerate; keep on the kitchen counter covered with a bowl
