Ingredients
| Egg shaped brinjals - 250 grams | ||
| Green chillies | 3 | |
| Garlic | 6 Clove (5gm) | |
| Ginger | 1 Inch, chopped | |
| Onion | 1 , minced | |
| Coriander seeds | 2 Teaspoon | |
| Chilli powder | 1/2 Teaspoon | |
| Turmeric powder | 1/2 Teaspoon | |
| Cumin seeds | 1/2 Teaspoon | |
| Coriander leaves | 1 Bunch (100gm) | |
| Oil | 3 Teaspoon | |
| Salt | To Taste | |
Directions
MAKING
1 In a grinder jar, add garlic, ginger, coriander seeds, salt, cumin seeds, turmeric and chilli powder .
2 Grind into a fine paste.
3 Using a sharp knife, slit the brinjals without removing the stalks.
4 Using a spoon, fill in the paste in the slits.
5 Set aside for a while.
6 In a pan, heat the oil.
7 Add in the onion and green chillies, sauté for a minute.
8 Add in the stuffed brinjals and fry until tender.
9 Cover and cook, turning frequently.
SERVING
10 Serve hot garnished with chopped fresh coriander.
