Simple Stuffed Artichokes Recipe Video
A simple italian inspired stuffing jazzes up artichokes
Ingredients
3 artichokes
1 Tbs olive oil
3 cloves garlic, whole
8 baby roma tomatoes chopped, squeeze out seeds and juice
1 garlic clove, chopped
1 tsp dried oregano
2 Tbs chopped fresh parsley
1 Tbs chopped fresh basil
1/2 cup breadcrumbs
1/2 cup freshly grated Parmesan cheese
juice of 1 lemon
fresh pepper
sea salt
Directions
Boil a large pot of water, add olive oil and whole garlic cloves (peeled)
add artichokes (trim top, cut off stem and snap off tough outer leaves) and cover, cook 30 -40 mins or until tender
let drain upside down, when cool enough to handle remove choke
combine tomatoes, herbs, breadcrumbs, cheese and lemon juice in a bowl, season with salt and
pepper (can add a splash of vegetable broth if mixture is not binding together well)
stuff center of artichoke and place some stuffing between outer leaves
add artichokes (trim top, cut off stem and snap off tough outer leaves) and cover, cook 30 -40 mins or until tender
