Stuffed Trout Recipe

Ingredients

 
1 tbsp (15 ml) butter
 
1/4 Cup (60 ml) onions, finely chopped
 
1/4 Cup (60 ml) celery, finely chopped
 
1 garlic clove, finely sliced
 
Salt and pepper
 
Pinch of tarragon
 
1/2 Cup (125 ml) cooked rice
 
2 tbsp (30 ml) water
 
4 trout, 1/2 lb (225 g) each
 
1 tbsp (15 ml) chopped parsley

Directions

–  Preheat oven to 450 °F (230 °C).
–  In a skillet, melt butter and saute onions, celery, and garlic; season with salt, pepper, and tarragon, then add rice and a small amount of water. Spoon stuffing loosely into trout, then close opening and set aside.
–  Butter a baking dish, put the stuffed trout in, cover loosely with aluminum foil and bake for 10 minutes.
–  Place stuffed trout in a serving dish, garnish with parsley and serve with shrimp sauce.
