Stuffed Tomatoes Recipe
Ingredients
| Firm tomatoes - 4 | ||
| Cottage cheese | 125 Gram | |
| Fresh chives - 5 millilitres or 1 level teaspoon, chopped | ||
| Fresh parsley - 5 millilitres or 1 level teaspoon, chopped | ||
| Lemon - ½, finely grated zest | ||
| Orange | 1 | |
| Lettuce - as needed | ||
| Cucumber - as needed | ||
| Watercress - as needed | ||
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
MAKING
1. Cut a slice from top of the tomatoes; remove and discard seeds.
2. Using a fork, crush cottage cheese to even out lumps.
3. Add chives, parsley and lemon zest; mix well.
4. Peel orange and chop.
5. Add to the cheese mixture and fold gently.
6. Season with salt and pepper.
FINALISING
7. Refrigerate stuffing for 15 minutes for the flavours to blend.
8. Into the tomatoes, stuff cheese mixture.
SERVING
9. Serve Stuffed Tomatoes with green salad.
