Ingredients

 Firm tomatoes - 4
 Cottage cheese125 Gram
 Fresh chives - 5 millilitres or 1 level teaspoon, chopped
 Fresh parsley - 5 millilitres or 1 level teaspoon, chopped
 Lemon - ½, finely grated zest
 Orange1
 Lettuce - as needed
 Cucumber - as needed
 Watercress - as needed
 Salt To Taste
 Pepper To Taste

Directions

MAKING
1. Cut a slice from top of the tomatoes; remove and discard seeds.
2. Using a fork, crush cottage cheese to even out lumps.
3. Add chives, parsley and lemon zest; mix well.
4. Peel orange and chop.
5. Add to the cheese mixture and fold gently.
6. Season with salt and pepper.

FINALISING
7. Refrigerate stuffing for 15 minutes for the flavours to blend.
8. Into the tomatoes, stuff cheese mixture.

SERVING
9. Serve Stuffed Tomatoes with green salad.
