Stuffed Tomatoes Recipe
Ingredients
| Tomatoes | 8 Medium | |
| Bacon drippings | ||
| Ground beef | 1/2 pound | |
| Onion | 1 Large, finely chopped | |
| Green onions | 1/2 Bunch (100gm), finely chopped | |
| Bell pepper | 1 To taste, finely chopped | |
| 6 slices bacon, fried crisp and crumbled | ||
| Seasoned bread crumbs | 3 Cup (16 tbs) | |
| Butter or oleo | ||
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
Cut off stem ends of tomatoes.
Scoop out pulp and spoon into bowl with bacon drippings.
Place tomatoes upside down to drain.
Cook ground beef with onion, green onions and bell pepper until meat begins to brown.
Add tomato pulp and crumbled bacon.
Season to taste.
Combine meat mixture with seasoned bread crumbs and stuff each tomato.
Sprinkle bread crumbs on top and dot with butter.
Place tomatoes in shallow baking pan with small amount of water in bottom of pan.
Bake uncovered at 350 degrees until topping is browned.
