Stuffed Squash Recipe

I got this excellent 5 rated Stuffed Squash recipe from my neighbor. Just a look at this Stuffed Squash and you will feel hungry. You will definitely thank me for sharing it!

Ingredients

 
4 buttercup or acorn squash
 
1 large apple, chopped
 
1/3 cup (80 ml) walnuts, chopped
 
1/4 cup (60 ml) sugar
 
1/4 cup (60 ml) raisins
 
2 tbs (30 ml) butter or margarine
 
1/4 cup (60 ml) maple syrup

Directions

Preheat oven to 400°F (205°C).
Wash squash.
Cut tops off and scrape out seeds and strings.
Place cut side down on baking sheet and bake until squash is tender when pricked with fork.
Combine remaining ingredients in saucepan and heat gently until well blended and soft.
When squash is done, remove from oven and fill cavities with filling.
Pour a little maple syrup over each just to moisten tops, and return to oven to heat through.

We tried this and enjoyed it quite a bit. We made more filling than the recipe said...doubling the amount for 2 large acorn squash & cutting back on the sugar somewhat.
