1 1/2 pounds ground beef
 
2 tablespoons tomato paste
 
2 onions, chopped
 
2 cups water
 
4 tablespoons butter
 
Grated cheese or cheese slices
 
Salt and pepper
 
Dash of cinnamon
 
2 pounds summer squash, split and scooped out
 
AVGOLEMONO SAUCE

Directions

Brown ground beef and onions in half the butter and add salt and pepper and cinnamon.
Place squash in casserole and stuff.
Dot with remaining butter.
Add tomato paste mixed with water.
Sprinkle with grated cheese or top with slices of cheese.
Bake in a 350 degree oven for 1 hour.
Stuffed squash may be served with avgolemono sauce, if desired; omit tomato paste if avgolemono sauce is served.
