Ingredients

 
*4 Tablespoons Butter
 
*1 1/2- 2 Lbs Dover or Grey Sole
 
*2/3 Cup Chopped Tomato
 
*1 Teaspoon Minced Garlic
 
*2 Tablespoons Parmesan Cheese
 
*2 Tablespoons Chopped Fresh Basil

Directions

In a pan, melt 3 tbsp of butter until it starts to bubble.

Now toss in 1 tbsp minced garlic and 2/3 cup chopped tomatoes.

Cook for only 30 seconds with constant stirring.

Turn off the heat and put 1 tbsp of chopped fresh basil and 2 tbsp Parmigiano cheese.

Lay out the sole in a baking pan and add the saucy mixture to each fish.

Then fold these fish into half.

Cut small tiny cubes of butter on each folded fish and put the tray in the oven for 12-15 minutes.
