Stuffed Rolled Rib Roast Recipe
Ingredients
| 4 ounces thinly sliced, fully cooked ham, chopped | ||
| Bacon Slices | 3 , snipped | |
| Onion | 1/4 Cup (16 tbs), chopped | |
| 2 tablespoons chopped pimiento-stuffed green olives | ||
| Garlic | 1 Clove (5gm), minced | |
| Egg | 1 , beaten | |
| 1 4- to 5-pound boneless beef rib roast | ||
Directions
In bowl combine chopped ham, snipped bacon, onion, olives, garlic, and beaten egg.
Unroll roast; spread ham mixture over meat.
Reroll roast; tie securely.
Place roast, fat side up, on rack in shallow roasting pan Roast, uncovered, at 325° about 3 hours for rare.
Let stand about 15 minutes.
Remove strings and carve
