Stuffed Roast Of Veal Recipe
Ingredients
3 tbsp (45 ml) butter
Apple Stuffing
2 Cups (500 ml) soft part of bread, diced
1 onion, finely chopped
3 celery stalks, diced
2 apples, diced
1/2 tsp (2 ml) chopped parsley
1/4 tsp (1 ml) marjoram
1/4 tsp (1 ml) thyme
1 veal roast, 3 to 5 lbs (1,4 to 2.3 kg), boned
Directions
– Preheat oven to 400 °F (205 C°)
– In a large skillet, melt butter, mix all stuffing ingredients, cook gently for 10 minutes and let stand to cool.
– Stuff veal roast cavity with apple stuffing, close cavity and secure with a skewer or tie with string.
– Roast veal in uncovered roasting pan, about 20 minutes per pound.
