Stuffed Rigatoni Recipe
Ingredients
| 2 2/3 cups part-skim ricotta cheese | ||
| Parsley | 2 Tablespoon, chopped | |
| 1 tablespoon plus 1 teaspoon grated Parmesan cheese | ||
| Dash each salt and freshly ground pepper | ||
| Rigatoni | 2 2/3 Cup (16 tbs) | |
| Marinara sauce | 2 Cup (16 tbs) | |
| Chopped fresh parsley to garnish | ||
Directions
In small bowl combine ricotta cheese, 2 tablespoons parsley, Parmesan cheese, salt, and pepper; mix until thoroughly blended.
Fill each macaroni tube with an equal amount of cheese mixture.
Arrange side by side in oblong casserole.
Pour sauce evenly over stuffed rigatoni.
Bake at 375°F.for 35 minutes.
Garnish with chopped parsley just before serving.
