Red potatoes - 20, petite
 
Olive oil
 
Salt and Pepper
 
Italian sausage - 9 ounces
 
Monetary jack cheese - 4 ounces
 
Green onion - 1, sliced on a diagonal, for garnish

Directions

GETTING READY
1) Preheat oven to 425 degrees.

MAKING
2) On a baking sheet lined with aluminum foil, drizzle olive oil over potatoes and generously salt and pepper the potatoes. Roll the potatoes around to season well and place in the oven until fork tender, about 30 minutes.
3) While the potatoes are baking in the oven heat, up a medium skillet over medium-high heat and place the sausage in the pan. Cook the sausage until cooked through, about 8-10 minutes then place on a plate lined with paper towels and set aside.
4) Once potatoes are fork tender take them out of the oven and allow for them to cool for easy handling. Then slice the potatoes in half, and with a melon baller spoon scoop out the center of the potato, leaving some around the edges.
5) Fill the potatoes with sausage and top with cheese. Place back onto the baking sheet and into the oven for another 5 minutes or until cheese is melted.

FINALIZING
6) Place a green onion slice on each potato.

SERVING
7) Serve with sour cream. Enjoy!
