Ingredients
1 rolled pork shoulder roast (about 4 pounds)
1/2 cup finely chopped celery
1/4 cup chopped onion
2 tablespoons butter or margarine
1 cup (4 ounces) shredded
Cheddar cheese
1 cup herb-seasoned croutons
Directions
1. Carefully untie roast and spread flat. Set aside.
2. Put celery, onion and butter into a 1-quart glass casserole. Cook uncovered in microwave oven 4 minutes at High, or until onion and celery are crisp-tender; stir after 2 minutes.
3. Add cheese and croutons to vegetable mixture; stir. Spread stuffing over meat. Roll up meat and tie with clean string. Set on a microwave-oven-safe roast rack set in an 8-inch square or a 2-quart glass baking dish. Cover with waxed paper.
4. Cook in microwave oven 40 minutes at Medium-High, or until meat tests done.
5. Remove from oven, cover with aluminum foil and let stand
20 minutes for heat to equalize; during this time internal temperature will rise to 170°F.
