Combine bread, crackers, 1 /8 teaspoon pepper, poultry seasoning and sage.
Cook onion in small amount of butter until tender.
Add onion and remaining butter to bread mixture; toss gently until mixed thoroughly.
Add enough water to moisten.
Sprinkle salt and pepper to taste on outside and inside pockets of chops.
Fill pockets with stuffing; fasten with toothpicks.
Flour both sides; brown in oil gradually.
Add mushroom soup.
Bake covered, in 350-degree oven for 60 minutes or until tender.
